Dishwasher Detergent for Bakery Operations
Wrong detergent in the JD-3 (or any commercial dishwasher) means either dirty output or damaged equipment. Here is the practical guide to detergent selection for bakery use.
The Two Main Categories
1. Alkaline detergents (pH 11–13)
The workhorse of commercial dishwashing. Effective on fats, oils, sugar residue, baked-on food. Works in conjunction with high wash temperature (60–65°C) to emulsify and lift residue.
Best for bakery use. Most JD-3 customers use a general-purpose alkaline detergent at pH 12–13.
2. Enzyme detergents (pH 7–10)
Lower pH, contains proteases and amylases that break down protein and starch residues. Gentler on aluminum, hand-engraved tableware, and silver.
Use when: Heavy egg-wash residue, dough residue, or you have aluminum or silver tableware to protect.

Critical: Low-Foam Formulation
Commercial dishwashers (including JD-3) need low-foam detergent. Consumer-grade detergents are formulated for visible suds (psychological cue for consumer satisfaction). In a commercial machine, those suds clog the pump, reduce spray pressure, and overflow the wash tank.
If your output is foggy or your machine is throwing error codes: first thing to check is whether you're using consumer-grade detergent. Switch to a low-foam commercial product immediately.
Rinse Aid
Rinse aid (a surfactant added to the final rinse water) reduces water surface tension so droplets sheet off cleanly. Result: no water spots on plates or glasses, faster drying.
For bakery operations, rinse aid is optional for trays and pans (which don't show water spots) but recommended for any glassware, ceramic plates, or stainless work surfaces you wash.
Detergent Dosing
The JD-3's optional auto-detergent dispenser delivers ~3–5 mL of liquid detergent per cycle into the wash tank. For manual dosing (without the dispenser): add ~50 mL of liquid detergent to the wash tank at startup; top up after every 30–40 cycles.
Over-dosing wastes detergent and may leave residue on items. Under-dosing means dirty output. The auto-dispenser eliminates this guesswork.
How to Adjust the Built-In Dispenser
The JD-3's built-in dispenser dose can be tuned in under 30 seconds with a small flat-head screwdriver. Watch the procedure:
Hard Water Considerations
If your municipal water exceeds 150 ppm total hardness (typical in much of the Middle East, Mediterranean, and US Southwest), add a water softening additive or invest in the JD-3 water treatment module. Without water treatment, scale builds up on heating elements, reducing efficiency and eventually causing failure.
What NOT to Use
- Bleach or chlorine-based products (corrode SUS304 over time)
- Consumer dishwasher tabs/pods (high foam, wrong chemistry)
- Hand-dish soap (designed for foam, not for machine washing)
- Vinegar in regular cycles (use only in dedicated descaling cycles)
